Cheesy Funeral Potatoes

ingredients:
1 stick butter
32 oz. shredded potatoes (frozen)
1 diced onion
1/4 c. flour
1 c. milk
2 c. chicken broth
1 c. sour cream
2 c. shredded cheese
topping (optional)
1/4 c. parmesan cheese
2 c. kettle chips or cornflakes
directions:
1. Preheat oven to 350' and grease 9x13 pan with butter. Let the potatoes sit out while you make the sauce.
2. Melt butter & sauté the onions until soft and translucent (3 min ish), add the flour and cook for 2 more min.
3. Add milk (very slowly), then broth (very slowly), let the mixture thicken (3 minutes)
4. Add sour cream & cheeses and mix in potatoes
5. bake for 25 min at 350'
for topping: crush flakes or chips, add parmesan and 1 Tbs. melted butter, sprinkle over top and cover with foil while baking for 15 min. take off for last 10-15 more minutes to crisp up.
