Joseph Fielding Smith's Favorite Bread

ingredients:
2 Tbs. yeast
½ tsp. sugar
½ c. warm water
mix those together and let it get all foamy

In your mixer:
4 c. flour
4 Tbs. oil
4 tsp. salt
½ c. sugar
mix until blended on slow/med speed
add foamed up yeast
2 c. warm water
2 c. more flour
mix on slow/med speed until dough is barely sticky
add 1 c. warm water
2 to 3 c. flour until dough is barely sticky (pulling away from the sides of the bowl)

mix at med speed for 5 minutes. Pull out of mixer and shape into a ball on a lightly floured countertop. Cover & let rise for 15/20 minutes. Knead it back down and squeeze out all the air bubbles. Cut into 4’s (each loaf should weigh roughly 1 lb. 4 or 5 oz.). Shape into a loaf and place in a greased loaf pan to rise for 30 minutes or until it has almost doubled in size, bake all at the same time in an over rack at the middle of your oven.  Bake in the oven 400 or 375’ for 20 minutes or until the top is nice and brown.  Pull out and remove from pan. Try not to burn your mouth on hot delicious homemade bread.

yield: 4 loaves
