Caprese Pasta Salad
1pkg. of tortellini or pasta
1 container (12 oz) cherry or grape tomatoes, diced
12 oz. mini mozzarella balls, or diced mozzarella
4 oz or 1/2 cup parmesan cheese, grated or shaved
1/2 c olive oil
1/4 c balsamic vinegar
3 cloves garlic, minced
1/2 onion, sautéed
optional: sliced salami
salt/pepper to taste
directions: cook pasta (in salty like the sea water) according to package directions, meanwhile sautéed onion in tbs of olive oil. Place pasta in cold water to cool down. Mix everything in a bowl and add pasta, onions, and salt and pepper to taste.
