Vodka Sauce
ingredients:
olive oil
1 1/2 onion, chopped
12 cloves garlic, pressed
(2) 28oz. canned tomatoes
1 c. vodka
12 Tbs. tomato paste
salt to taste (maybe 1 tsp)
1/2 tsp. red pepper flakes
1 c. whipping cream
This makes a large batch, enough for your dinner party, plus more to freeze or store in the fridge.
directions:
1. Coat the bottom of your pan in olive oil over medium heat. Add onion and cook until it gets translucent (about 4-5 minutes) add garlic and cook until fragrant (about 1 minute).
2. Add canned tomatoes, vodka, paste, red pepper flakes and about one tsp. of salt. Cook uncovered over medium heat stirring occasionally for about 20 minutes.
3. Blend the the sauce in a blender or with an immersion blender to get a smooth velvety texture.
4. Return to the pan and add the cream. Heat just until its heated through. Final taste and adjust the salt if needed.
5. Optional: serve with grated Parmesan to sprinkle over the top.
